Mussels are shellfish which are enjoyed throughout all of France, especially in the Basque country. Escabèche sauce, which was originally a way to preserve the ingredients, is made of oil, vinegar, spices, seasonings and salt. It goes beautifully with fish and shellfish. This is one of EDERKI's specialties, and is great at cocktail time!
