VERRINE OF APRICOT, QUARK CHEESE AND GINGER BISCUIT

  Ingrédients Recette

  • 200g quark cheese (or Basque sheep milk yogurt)
  • 2 tsp sugar
  • 16 Ederki apricot halves in syrup
  • Ginger biscuits

  Préparation Recette

  • Drain the apricots in a strainer, then cut into pieces to make a compote.
  • Combine the sugar with the quark cheese
  • Place the apricot compote at the bottom of the verrine
  • Add the crumbles ginger biscuits
  • Top with a layer of the sweetened quark cheese
  • Repeat the above until the verrine is almost full
  • Finish with a layer of apricot and a few crumbled pieces of ginger biscuit.
  • Chill at least 2 hours prior to serving
  • Serve chilled!

You can replace the ginger biscuits with shortbread cookies!
